
A little about me! I have lived in the seacoast area almost my whole life...and I LOVE IT!
I am the youngest of 5 kids in a great big loving family from Durham! I was a proud scholar/athlete at Oyster River and made the big move to Plymouth State College(yes it was still just a college when I went there...how do you think I got in!)
I've played a whole lot of soccer over the past...yeeesh...WHOLE LOT of years. I have met some great friends playing soccer in Hampton and pick up games from York ME to the back fields of UNH!
I was a 911 Dispatcher in Rockingham County...(yes..I was who you got when you dialed 911...don't be scared!) While there, I was lucky enough to meet a great guy with 3 kids of his own, got hitched and have topped off our great family with one more little button to make our clan and even number of 6!
I have been involved with Clear Channel NH now for about 3 years...but, behind the scenes as Promotions Director for WERZ so I might look a little familiar to some! I have been the "SUB" for lots of on air shifts, traffic and events! Now I am very happy to have a show of my own here at WERZ. Thanks to Oakhurst for these recipes! Im going to try the Parfaits this weekend... and maybe tuesday for the Soup...all sounds yummmy! I'll let you know how it goes!
Fruit and Pudding Parfaits
3 C. Oakhurst Plus Omega Three low fat milk
¼ C. sugar
2 ½-3 Tbsp. cornstarch
1 egg
1 tsp. vanilla
Fresh fruit cut into bite-sized pieces
In a large saucepan, bring milk almost to a boil over low heat.
Meanwhile, stir together cornstarch and sugar.
Stir egg into sugar/cornstarch mixture.
Ladle some of hot milk into egg mixture and stir together. Slowly pour the warm egg mixture into the hot milk, stirring the hot milk constantly. Heat pudding on low, stirring frequently, until it simmers for about one minute.
Remove from heat. Stir in vanilla. Cool.
Layer fruit and pudding in tall dessert or beverage glasses.
Serves 4-6.
Butternut Squash Soup (Tastes like warm pumpkin pie!)
Combine in a saucepan:
1 C. canned or fresh mashed butternut squash (or pumpkin)
3 C. Oakhurst Plus Omega Three low fat milk
2 Tbsp. dark brown sugar
¼ tsp. cinnamon
¼ tsp. allspice
¼ tsp. nutmeg
¼ tsp. ground ginger
Heat until warm – do not boil. Serve warm with a dollop of vanilla yogurt.
Serves 2-3.
